Interesting article. It makes a very clear point, little room for debate. Just because some of the first Chinese immigrants adapted to available ingredients in the United States, why would that be considered inauthentic Chinese food? They continued their traditions and created something new. Culture has to innovate to live on, don't you agree? 

 

I do agree, absolutely.

 

As I've grown older and tried new things, I've learned that there's really no generally recognized "cuisine" where I don't really appreciate and enjoy at least some of the dishes.  My Dad doesn't like Chinese food, my Mother has no taste for Indian food, but I've found something to enjoy in every national/regional palette I'e sampled.  Which may be part of why I've spent the last year trying to lose weight!
